James (Jimmy) Matthew Pastore, age 82, beloved husband of Joan C. Sciongay Pastore of Seymour, died peacefully on March 20, 2025 at Griffin Hospital with his spouse of 59 years by his side. Born in New Haven on January 2, 1943, he was the son of the late Nicholas R. and Fortunata Sabetta Pastore. Jimmy was raised in Derby, attended Derby High School, and graduated from Ansonia Beauty Academy, to eventually become the family barber and hair stylist (a good one!). He was an active member of the Derby United Methodist Church.
Jimmy had an innate ability to fix or repair just about anything (a real-life MacGyver), and he applied these skills as a self-employed Plumbing-Heating & Air Conditioning contractor, for over 40 years, until his retirement in 2013. In his youth, he was in the Boy Scouts, learned to play the accordion, played pool, and went fishing and hunted for mushrooms with his dad, and learned how to cook from both of his parents. He loved riding his motorcycle & taking rode trips with friends, especially to Cape Cod. A very devoted husband and father, Jimmy took the family on winter snowmobiling vacations to Old Forge, NY and Vermont and looked forward to summer days fishing with his cousin Russ and especially fishing for snappers with his dad in Long Island Sound. In later years, Jim and his wife felt very fortunate to be able to travel, visiting Florida, California, Hawaii, Alaska, Yellowstone National Park, Las Vegas, and Oregon.
Jimmy also enjoyed skeet shooting and target shooting with his wife and sometimes included his brother-in-law, Eddie. He liked playing cards, especially Pinocle with family and friends. He enjoyed bowling and played on leagues for many years. Also, Jimmy was a fabulous cook, known for his Italian specialties. He especially looked forward to Thanksgiving and cooking the biggest turkey he could find and making pounds of Italian sausage stuffing (enough leftovers to last for 3-4 days). At Christmastime, Jimmy couldn't wait to scour Jones Tree Farm for the most perfect and the tallest Christmas tree he could find.
In addition to his devoted wife, Joan, he is survived by his beloved daughter, Shirley Marie McCormack and her husband, Geoff, of OH; his sister, Carol Ann Keefe of Hamden; grandchildren, Grace and Sylvia McCormack of OH and Nathaniel and Jacob Goulart of NY; a son-in-law, Joshua Goulart of NY; as well as several nieces and nephews. He was predeceased by his beloved daughter, Joan Catherine Goulart; his brother, Nicholas M. Pastore and brother-in-law, Thomas Keefe.
